It is typically boneless and has a thick, uniform shape that makes it easy to cook evenly.

Recipe Ingredients:

  • 4 Sirloin Coulotte (Picanha) Steaks, about 8-10 ounces each
  • Salt and pepper to taste
  • 2 tablespoons of olive oil
  • 2 garlic cloves, minced
  • 2 sprigs of fresh thyme
  • 2 sprigs of fresh rosemary

Recipe Instructions:

Step 1: Preheat your oven to 425°F.

Step 2: Season the Sirloin Coulotte Steaks generously with salt and pepper on all sides, and let them come to room temperature for about 30 minutes.

Step 3: Heat a large oven-safe skillet over medium-high heat, and add the olive oil.

Step 4: Once the oil is hot, add the Sirloin Coulotte Steaks to the skillet and sear them for about 2-3 minutes per side until they have a nice crust.

Step 5: Add the minced garlic, fresh thyme, and fresh rosemary to the skillet.

Transfer the skillet to the preheated oven, and continue to cook the steaks for about 6-8 minutes, or until they reach 

  • For medium-rare, cook to  an internal temperature of 135-140°F.
  • For medium, cook to an internal temperature of 145°F.
  • For well-done, cook to an internal temperature of 155°F.

Step 6: After roasting, remove the skillet from the oven and let the steaks rest for about 5 minutes to allow the juices to redistribute.

Step 7: Slice the steaks against the grain into 1/4-inch thick slices, and serve.

This recipe serves about 4 people, with one Sirloin Coulotte Steak per person. The cooking time should take about 10-15 minutes depending on your desired level of doneness.
