How do I order?

Or shop in store at the ranch. 2408 Hamrock Rd, Italy, TX 76651. Monday through Friday, 8:00am to 3:30pm. After hours and weekends by appointment.
For a whole or half beef, calling is easier, since we walk through your cut sheet together.
Do you deliver?
Three ways to get your beef:
- Store pickup at the ranch. Free. 2408 Hamrock Rd, Italy, TX 76651. Monday through Friday, 8:00am to 3:30pm. After hours and weekends by appointment.
- Meat & Greet delivery. We run orders out to Corsicana, Hillsboro, Midlothian, Waco and Waxahachie. The fee runs $20 to $40 depending on mileage.
- UPS shipping. Ordered online and shipped to your door. Rates vary by location.
For bulk and freight orders, give us a call and we’ll sort it out.
Where do you ship?
We ship throughout the continental United States via UPS. We are not currently set up to ship to Alaska or Hawaii.
How does the meat arrive?
Frozen and vacuum sealed, in boxes. If you’re picking up at the ranch you don’t need to bring anything, though you’re welcome to bring coolers for a big order.
Free Beef Friday
What is Free Beef Friday?
Every Friday we give away a free item with your purchase. For every $100 you spend in the shop, you get one free item. Spend $200 and you get two, spend $300 and you get three.
The item changes week to week.
What qualifies?
Anything sold in the store, plus boxed quarters and eighths.
Wholes and halves are not eligible. Those are already priced on hanging weight and cut to order.
Cannot be combined with other promotions.

The Ranch & The Beef
Where does your beef come from?
Our own ranch in Italy, Texas, in Ellis County. We raise it, we know every animal, and we have it processed to our own standards.
What’s the difference between F1 Wagyu and Hooser Reserve?
F1 Wagyu. “F1” means first generation cross. We breed a Wagyu bull to our Angus cows, so the calf is half Wagyu, half Angus.
That cross is deliberate. Wagyu genetics bring the fine, evenly spread intramuscular marbling that gives the beef its buttery richness. Angus brings frame, hardiness and a solid beef backbone. Purebred Wagyu are small and slow to finish. Crossing them onto Angus gives you Wagyu marbling on a bigger, better-finishing animal.
On the plate: heavier marbling, richer flavor, and more forgiving on the grill, because that intramuscular fat protects the steak if you run a little past your mark. Best in the ribeyes, strips, picanha and anything you want to sear.
Hooser Reserve. Most of the time this is Angus crossed with Hereford, the classic black baldy. Sometimes it’s Brangus, and sometimes it’s pure Angus.
Crossbred cattle get what stockmen call hybrid vigor: they are hardier and healthier than either parent line on its own. The Angus side carries the marbling and the black hide. The Hereford side brings good temperament, easy fleshing and strong foraging. When we run Brangus, the Brahman influence adds real heat tolerance, which matters in a Texas summer.
On the plate: a cleaner, more traditional beef flavor and slightly leaner cuts. If you find Wagyu too rich, this is your line. It roasts beautifully and makes exceptional ground beef.
Both are heifers and steers processed at 24 to 30 months, both dry age 21 days, and both are cut to your sheet. You aren’t choosing between good and better. You’re choosing a flavor profile.
Why does the age of the animal matter?
We process heifers and steers at 24 to 30 months. Not cows, which have already calved, and not bulls. Those are mature animals and their beef goes to lean grind.
That 24 to 30 month window is where marbling, tenderness and flavor come together. It’s a fair question to ask anyone selling you beef, and not everyone answers it.
Can I visit the ranch?
Yes. The ranch store is open Monday through Friday, 8:00am to 3:30pm, and we’d love to have you. Ranch visits and tours are by appointment, so call or text ahead and we’ll set a time.
Do you sell anything besides beef?
Yes. Pasture-raised pork, chicken and lamb, plus specialty items: beef bacon, pepperoni, snack sticks, jerky, dry sausage, sausage rings, bratwurst, rendered tallow and whipped tallow.
We also carry Meat Church BBQ rubs and seasonings, and Maggie Moo Merch, our own hats, shirts and ranch gear named after Maggie Moo herself.
