Cooking Tip:
Form into patties about ½-inch thick. Cook over medium heat 3–4 minutes per side until you get a deep brown crust. Don’t press them down — that’s where the juice escapes. For gravy: brown a pound, sprinkle with flour, slowly whisk in milk until silky, season heavy with pepper. Pour over hot biscuits. Breakfast won.
