Cooking Tip:
Pull from fridge 20 minutes before cooking. Season heavy with salt, pepper, and crushed garlic. Sear in HOT cast iron with olive oil, 2–3 minutes per side for medium-rare (135°F internal). Baste with butter, thyme, and crushed garlic in the last minute. Rest 5 minutes. Serve with mint chimichurri or a squeeze of lemon.
