Cooking Tip:
Score the fat cap lightly. Rub with olive oil, crushed garlic, fresh rosemary & thyme, salt, and cracked pepper. Sear all sides hot in cast iron. Transfer to a 400°F oven until internal hits 130°F for medium-rare (about 15–20 minutes). Rest 10 minutes — important! Slice between the bones into individual chops. Serve 3 chops per person with mint chimichurri.
