There is something satisfying about being able to purchase quality grade beef that is locally grown in central Texas, pasture raised without hormones or routine antibiotics, and processed without added salt, chemicals or colorants. Hooser Custom Meats, located at 2408 Hamrock Road, Italy, Texas 76651 provides just that opportunity. Opened by James and Lisa Hooser, owners of J&L Farms, Hooser Custom Meats was formed as a way to provide the same product to the public that their family enjoys

James is a fourth generation farmer and rancher, who grew up in Frost, Texas and worked side by side with his parents Jimmy and Kay Hooser at Hooser Farms. To continue the farming legacy, in the 90’s James and Lisa started J&L Farms, which has grown to include a few thousand acres of crop and pasture land and several hundred head of cattle. They have one daughter, Carly Williams, her husband Joseph and their kids Brayden and Collyns. Carly works as a pediatric nurse. Their son, Samuel Hooser, lives in Baltimore, Maryland and works for Microsoft as a game designer.

Feeder calves chosen for Hooser Custom Meats are provided a grassfed and grainfinished diet with continuous access to water and pasture. The remaining cattle in the cow/calf operation are pastured and fed hay, ration supplements, minerals, and creep feed for the baby calves. All of the cattle are cared for by Pedro Hernandez and Jerrod Cameron and their crew

Hooser Custom Meats offers two product lines, both of which have Angus based genetics. The Wagyu beef is a cross between an Angus cow and a full blood Wagyu bull, (Texas Wagyu). The Hooser Reserve line is an Angus or Angus/Hereford cross. Hooser Custom Meats uses all cuts of the cow and is a whole animal operation. All meat products are processed at government inspected facilities and dry aged for 14 days or longer. Freezers are maintained and food safety standards are always met

Both Wagyu and Hooser Reserve beef are available in many different cuts, from Ground Beef, Patties, Cutlets, Fajita Meat, Chili and Stew meat, to NY StripsRibeye’s, and Filets. There are many options to choose from. Various boxes are also provided, including the Employees box, Steak Value box, Fajita box, Burger and Brat box, and a Roast/Stew/Chili box. There’s something for everyone and it’s all high quality beef. Specialty items that they sell are Jerky, Snack Sticks, Smoked Sausage, Summer Sausage, Bratwurst as well as Meat Church BBQ Rubs and Seasonings. According to James, he will continue to go where the market leads. Through the efforts of Tori Moses, Marketing & Service Specialist, Hooser Custom Meats is growing from primarily local sales to include a broader regional presence.
