Cooking Tip:
Soak slices in milk for 30 minutes to mellow the flavor. Pat dry, dust in seasoned flour, and sear in butter or tallow with onions, garlic, and a splash of balsamic. Don’t overcook — 90 seconds per side for tender, pink-inside, melt-in-your-mouth liver. Overcooking = chalky. Just don’t.
