A whole beef take home weight is typically between 450-500lbs (half would be 225-250lbs), with an average hanging weight of 800-900lbs (half would be 400-450lbs). This is all dependent on how you have it cut as well.
A whole beef usually contains the following cuts:
20–25% steaks
25–35% roasts
Short ribs, bones, and fat.
40–50% ground beef, stew meat, or chili meat.
The meat from each primal cut has its own unique flavor, texture, and level of fat and marbling.
High-quality beef is firm, velvety, fine-grained, lean, bright red in color, and well-marbled. The fat is smooth, creamy white, and well distributed.

Non-Refundable Deposit Listed ($2,500) Is Due Prior To Writing Up Cut Sheet If We Have Some At The Processor, Or Before Sending To The Processor If We Do Not Have Any Hanging At The Time Of Order. Deposit Will Be Applied To Balance. Remaining Balance Is Based Off Of Hanging Weight & Will Be Due At Time Of Pick Up.
