Cooking Tip:
Mix soy sauce, brown sugar, sesame oil, grated pear or kiwi (tenderizer), garlic, ginger, and a splash of mirin. Marinate the ribs at least 2 hours (overnight is best). Grill HOT over flaming coals or cast iron — 2 to 3 minutes per side, just until they char. Slice off the bones, serve over rice with kimchi.
