Cooking Tip:
Reverse-sear for steakhouse perfection: low oven (250°F) until internal temp hits 115°F, then finish in a screaming-hot cast iron skillet or over flaming coals for 60–90 seconds per side. Heavy salt & cracked pepper, rest 8–10 minutes, then slice off the bone and serve thick.
