Cooking Tip:
Pull the membrane off the bone side, hit them with a heavy salt & pepper rub, then smoke at 225°F until the meat pulls back from the bone. Wrap in butcher paper or foil for the last hour to lock in that Wagyu fat moisture. The bones should slide right out. Worth every minute.
